Contaminant detection is crucial in the production of food products. Whether from metals, pesticides, or even microbial effects, contamination threatens to turn even a highly efficient process into a liability because of the potential of a recall or litigation. Southwest Research Institute (SwRI) has developed several detection techniques to aid in rapidly identifying contaminated products. Among the on-line techniques SwRI can implement are the following:

• Eddy current techniques (on-line metal detection)

• Ultrasonic inspection (foreign mass detection, internal discontinuities)

• Real-time X-ray (foreign mass detection)

• Microwave techniques
